Just because someone has age-related difficulties eating or they’re on a restricted diet does not mean their food has to be boring. There are many tasty meal options for seniors that also provide good nutrition. The following lunches are not only healthy, but they’re also filling, delicious, and super easy to make.

Turkey Wrap 

Ingredients:

– 1 whole wheat tortilla

– Sliced turkey

– Avocado

– Spinach

– Tomato

– Mayonnaise

– Mustard

Instructions:

– Roll up and enjoy with a side of fresh fruit or cottage cheese

 

Kale and Quinoa Stuffed Tomatoes

Ingredients:

– 3 large garlic cloves minced

– 4 good sized tomatoes (cored out)

– 2 cups water

– 2 tsp olive oil

– 4 cups spinach or kale

– 1 tsp chopped parsley

– Parmesan cheese

– Mozzarella cheese (shredded)

– Salt and pepper to taste

Instructions:

– Pre-heat oven to 375 degrees F

– Heat oil in frying pan, adding spinach or kale, cook until wilted

– Mix garlic and parsley in and cook for a min longer, then remove from stove

– Cook quinoa in rice cooker: 2 cups water, 1 cup quinoa (or 15 min in 2 cups water, 1 cup quinoa on stovetop)

– Stuff mixture into tomatoes covers w/ foil and bake for 20 min

– Add cheese and bake for another 5 min
